This tea drinks like an early morning walk through the dew dusted grass. Grown in a small area of Shan Lin Xi (杉林溪), the same family has produced this tea for generations. Locally called the Valley of Dragon and Phoenix, its residents have great pride in their home.
High altitude grown tea (>1,000 meters) are highly sought after for their complex and delicate flavors. Thick fog surrounds the mountain offering the tea plant limited sunshine. Colder temperature slow down the tea plant growth thus increasing the concentration of aromatic oils. The altitude exposes the tea plant to greater amounts of UV light which encourages higher level of amino acids and nitrogen, resulting in more fragrant teas when the leaves are processed. We step softly as we pad across the hills, notice the taste of French chestnuts, sweet peas, and evergreen. The finish, vegetal and juicy, is the mountain’s top.
