052 / Pear Mountain at South Ridge
Pear Mountain, also commonly known as Li Shan, is a mountain peak known for producing delicious fruits and wonderful teas. Li Shan produces one of the best high elevation oolongs in the world. High altitude grown tea (>1,000 meters) are highly sought after for its complex and delicate flavors. Thick fog surrounds the mountain offering tea plant limited sunshine. Colder temperature slows down the tea plant growth thus increases the concentration of aromatic oils. The altitude exposes tea plant to larger amounts of UV light which encourages level of amino acids and nitrogen, resulting in more fragrant teas when the leaves are processed.
Pear Mountain at South Ridge drinks like an early morning walk through a misty mountain vista. Our feet are soft as we pad across dew-drenched grass and the accompanying scent rises to our nose. Taste sweet peas, a subtle French chestnut, and notice the long finish.
