053 / Frozen Summit '05 Vintage


Every year, the tea master carefully retrieves stored vintage teas, inspects them carefully and runs his fingers through the emerald crumbles by the handful. Their tuned sensibility tells them what temperature to roast the teas, to remove traces of summer rain and to layer on depths of flavors. Multiple slow roasts over the years permed the leaves like a hair dresser, curlier and darker with age.
The aromas of flower and ripen peach from 2005's Frozen Summit is transformed into roasted black current and berries. Its unique characteristics express notes tobacco, beaten leather, and damped earth. The mouthfeel is mellow and round, accented by flares of dry wood fire.
